HOW TO CHOOSE
The zucchini should feel heavy for its size. The skin should be dark green and smooth and free of blemishes. If the skin looks slightly shriveled, it probably hasn’t been freshly picked.
Zucchini is rich in several vitamins, minerals, antioxidants and other beneficial plant compounds. Zucchini may promote healthy digestion in several ways as it contains both soluble and insoluble fiber. Rich in antioxidants and anti-inflammatory nutrients, zucchini helps get rid of the body of free radicals and excess inflammation. The lutein in zucchini encourages skin health by reducing inflammation responses. All of this contributes to a healthy heart by decreasing the risk of stroke, reducing high blood pressure, and lowering cholesterol
Store zucchini unwashed in a perforated or loosely closed plastic bag for up to one week. Don’t wash or cut up the zucchini until ready to use.
